How’s your summer body looking these days? Mine is okay, but could definitely be better. Before you jump down my throat and tell me how I don’t have anything to complain about, let me clarify myself a little.
In no way, shape, or form am I calling myself heavy or fat. I work out consistently, 5 days a week, and my workouts are definitely hard. I burn an uber amount of calories and I know I’m a fit person.
But I have a problem. I legitimately have the worst eating habits known to man! All the amazing workouts I do just seem to counteract my horrible diet. If I look on the bright side of it all, I’m not necessarily gaining any extra weight which I guess is a good thing. Maybe or maybe not. Thoughts?!
Although I’m not gaining weight, I know I’m not eating the well-rounded diet that I should be. I don’t consume enough vegetables and fruits and I absolutely don’t count my macros. Oh, and I drink a few too many cocktails if you want the whole truth.
So when I say my summer body could look better, I’m not saying I’m fat or need to diet. I’m actually saying that although I’m an active person, my daily diet is suffering. I’m left feeling tired and bloated pretty regularly because of it.
Geez, I’m letting you know all my secrets today!
The thing is, I know I should be doing better. My body is telling me to do just that with all these yucky feelings I’ve had lately. So I have decided (finally!) to listen to my gut (no pun intended) and start incorporating healthier food options into my daily diet.
But where to start? My first thought went directly to adding more fruits and vegetables into my day. I used to be so good about adding them both in my morning protein shake but I haven’t even had one of those in months. I’ve really been struggling as you can tell.
I knew it would be fairly simple to begin reintroducing fruits and veggies into my diet if I promised myself to do the following:
- Actually purchase fruits and vegetables from the produce section of my grocery store. Yes, I wasn’t even doing a good job of that as of late. You can’t eat your fruits and veggies if you don’t have any in your house!
- Wash, clean, and chop any fruits and vegetables as soon as I return from the grocery store.
- Make some yummy dips for the fruit and veggies to add a little extra incentive to want to eat more of them.
That last one is a must in my opinion. Dip makes everything taste better! My favorite for dipping fruit in is this delicious two-ingredient marshmallow cream cheese dip. I literally make it ALL THE TIME to keep in the house or bring to gatherings.
For dipping veggies, it’s a toss-up between the two following recipes for the perfect vegetable dip with cream cheese. They’re so easy to put together that I just ended up making them both to have on hand. Plus, I knew you’d be interested in trying each of them!
2 Easy Veggie Dip Recipes with Cream Cheese
Italian Cream Cheese Veggie Dip (Savory Dip)
8 oz. cream cheese (softened), 1 oz. packet Italian seasoning packet, ½ cup of mayonnaise
*I used this same dip recipe for my Italian Cream Cheese Veggie Pizza and it was amazing!
Catalina Cream Cheese Veggie Dip (Sweet Dip)
8 oz. cream cheese (softened), ⅓ cup of Catalina salad dressing, a dash of salt (optional)
Variety of vegetables. I used broccoli, cauliflower, carrots, cucumber, and bell peppers.
For the Italian Cream Cheese Veggie Dip, add the cream cheese, Italian seasoning packet, and mayonnaise to a bowl.
Mix all the ingredients together until well combined.
For the Catalina Cream Cheese Vegetable Dip, add the cream cheese and Catalina salad dressing to a bowl.
Mix all the ingredients together until well combined.
Wash and prep all your vegetables. I purchased a precut bag of broccoli, cauliflower, and carrots. In addition, I chopped up an English cucumber and two bell peppers (one yellow and one orange).
If making a platter, add your dips to small ramekins and place them on a large serving dish.
Arrange the vegetables on the platter like so.
Doesn’t it look lovely?!
If you’re making the veggies and veggie dip to snack on at home, I recommend placing all the ingredients in plastic containers. Start by grabbing a larger container.
Add your two vegetable dips with cream cheese into two smaller plastic containers and place them inside your larger container.
Add the lids to the smaller containers and arrange your vegetables within the larger plastic container.
Place the lid on the larger container to store in the refrigerator.
When ready to serve, take off all the lids and put some spoons in the veggie dip.

Tiffany! You always come to the rescue with what I’m looking for! I need “EASY”–and these dips look both easy and delicious! And don’t be hard on yourself–we’re all eating the wrong things right now–this lockdown is tough and I think we’re all looking for a few comfort foods. One suggestion–I was feeling bloated and tired, too and I remember something from one of my nutrition classes–those feelings can indicate that your pH levels are “off.” Try Smart Water–it will help and it will give your body the electrolytes that it needs. Our pH can get off in times of stress–and we’re all under stress! Thanks for the great dip recipes–and for reminding us the importance of those veggies!
