I need your help. I need you to send me some of your will power so I can get my butt in gear in terms of my eating.
I’m really on the struggle bus right now with my diet. I know what to eat. I know how to cook healthy. I just don’t want to do it!
I know that sounds horrible for me to say but it’s the truth. I feel like a toddler throwing a temper tantrum right now but I really don’t care! I want my cake and I want to EAT it too.
Ugh, why does eating healthy have to be so hard?! Wouldn’t it be amazing if vegetables made you fat and ice cream made you skinny? A girl can dream…
You might be shocked to hear that my husband Patrick and I are going into week 5 of two intense fitness programs. We wake up 5 to 6 days a week and workout at home with Beachbody on Demand. I’m even running a couple’s workout accountability group for the month of February!
And we’re actually nailing it in the workout department which is kind of sad because we’re then killing it with our diet. With the amount of work we are doing, we should definitely be seeing better results than we are.
I do really well with my eating all day long but then splurge for dinner and enjoy late-night snacking. It has almost become our norm to sit on the couch, watch our shows, and finish off a bag of unwrapped Snickers or Swedish Fish.
Embarrassing but true!
I’m the cook in the house and also the grocery shopper. It’s really on me to get the ball rolling with all this healthy eating stuff. If I don’t buy the cookies and ice cream then there won’t be an option to eat them, right?
Or if I made a nice piece of salmon for dinner instead of t-bone steaks like I did on Saturday, we might possibly see some abs starting to show through where we now have cute little rolls of fat.
“The Boys” are pretty good at jumping on board with healthy eating habits but I’m always the one who has to get the ball rolling. If I make it, they’ll eat it. Or they’ll go hungry…
Because I’m completely selling myself out to you already, I might as well tell you the real reason I haven’t focused on eating healthier as of recently.
The reason: It’s exhausting for me! Maybe that sounds lazy, I know it does, but eating healthy is so much work.
Between searching for healthy recipes, buying and prepping the ingredients, and then making sure I’m eating a balanced diet along with the rest of my family, I feel like my life becomes completely consumed with food.
Something else I want to confess…I kind of feel a little resentful at the rest of my family during these times because I become the personal chef, trainer, and nutritionist for everyone. I have said a time or two to myself, “I wish I had a nutritionist and someone to make all my meals for me…”
This is a poor attitude on my part, but definitely “feelings” I have come to associate with healthy eating. And then if Patrick “cheats” and eats something off the plan, I get even more resentful. I know how much time and effort I’ve put into making all the meals/snacks and it’s like a stab in the heart when he doesn’t follow things to a “T”.
This time around, I’m determined to not feel this way about healthy eating. Eating healthy should be looked at as a gift and a way to fuel your body. There’s no space in that mindset for having feelings of laziness and resentment.
What am I planning on doing differently to work on this?
- Most importantly, I am going to involve “The Boys” in the process much more. Of course, I will do the cooking but I hope to get their help picking recipes and prepping the ingredients. Getting them involved in the kitchen more will hopefully get them more invested in the entire process and alleviate some of the stress off of me.
- I’m not going to count calories and be on a “diet”. Diets never last. Eating healthy is a lifestyle and treats need to be included in that. I will commit to cooking healthier and making better food choices but I won’t deprive the family of an occasional treat here and there.
I’m hoping with this approach, I’ll be better at sticking to things this time around. If you have any other suggestions I’d love to hear them. Feel free to add them to the comments section below.
So after a weekend of eating everything in sight, I decided today would be a great one to start introducing some healthier options into our diet. It’s not a completely healthy recipe, but it’s way healthier than what we’ve been doing.
My hope is that this recipe will tame down some of our late-night temptations and have us reaching for fruit instead of a handful of peanut M&M’s! Baby steps…
2 Ingredient Marshmallow Cream Cheese Snack Dip
16 oz. Marshmallow Fluff, 12 oz. whipped cream cheese, dippers (fruit, pretzels, graham crackers, etc.)
Empty the marshmallow fluff and whipped cream cheese into a large bowl and mix together. I used a handheld mixer but you can also use a standup mixer.
That’s the recipe! Can’t get any simpler than that.
A couple of tips:
- I sprayed my spatula with Pam cooking spray. This allowed me to easily remove the sticky marshmallow fluff from the container.
- I used a really large bowl so I could more easily combine the two ingredients together and avoid giving myself a bath with the ingredients.
- I used a 12 oz. container of whipped cream cheese so I didn’t have to worry about letting my cream cheese come to room temperature and soften. If you use the regular variety of cream cheese, I recommend you let it soften before using it.
- Feel free to use an 8 oz. container of cream cheese instead. It will just be a little milder of a cream cheese taste.
You can see the entire process from start to finish in these two YouTube videos. My son called me during the video and it automatically stopped it so I had to start another one. This was my first attempt at a video like this so the thought of putting my phone in airplane mode until I finished wasn’t even a thought in my mind. Lesson learned, for sure!
This 2 Ingredient Marshmallow Cream Cheese Snack Dip is perfect to keep in the refrigerator for the family but equally impressive enough to put on a fruit platter for your company.
Start with a nice big platter and a couple of bowls to hold your marshmallow cream cheese snack dip.
Wash some strawberries.
Cut up some watermelon. Because Valentine’s Day is on Friday, I opted to cut out hearts from my watermelon slices!
Slice up some apples and coat them with a little bit of lemon juice to prevent browning. I like to do this in a Ziploc bag.
Arrange the fruit on the platter.
Add your dip to the bowls and your platter is ready for the festivities!

First, this looks amazingly delicious and like you said, “so easy!” And with all the delicious, colorful fruits you add–, it IS healthy! Must make this for our next family gathering! And, I agree with you–why does eating healthy have to be so much work! I make salads every day and between washing, spinning, cutting, chopping all the ingredients–you would think I would burn a few more calories just making it but–in my case, I’m probably adding some!
