Cheesy Hash Brown Casserole is a super simple side dish that can easily feed a crowd. How do I know? Mainly because I have made this casserole somewhere around a million times for parties and gatherings. It has honestly been nothing short of a major success every single time I make it. How could you really go wrong with potatoes loaded with cheese, sour cream and butter!
This Sunday, we had some friends over for dinner. It wasn’t planned and it really was just a spur of the moment decision to have people over. As much as I like to be organized and always have things figured out, it’s nice to just go with the flow sometimes and not have to plan everything a month in advance.
Once the decision was made to have people over, I quickly came up with a menu and started putting together my grocery list.
In times like these, it’s always good to have some “Go To” recipes that you know are delicious and simple to prepare.
What was on the menu Sunday? In addition to this amazing Cheesy Hash Brown Casserole, we had steak with blue cheese butter and corn casserole. Both recipes have already been featured on the blog! You have to try them. It’s totally worth the calorie overload!
How do I think the impromptu dinner went? It was perfect! The food was great and the company was even better. It truly was a nice and relaxing Sunday night.
Most importantly, I wasn’t stressed at all. Why? Mainly because I had a stash of some great recipes that I knew would be easy to prepare and yummy at the same time.
What recipes can you make really well? Do you have some easy meals you can whip up in a snap? Don’t be ashamed if you answered no to one or even both of these questions. We all start somewhere, right? I know I did!
Here’s some advice from someone who started off not knowing a single thing about cooking or entertaining. Experiment. If you come across a recipe that sounds good to you, try it! The worst that will happen is it will be horrible and you’ll have to order pizza for dinner. There are definitely worse things in the world. Am I right?
The more you try things, the more comfortable you will become. Over time, you too will have a list of awesome recipes to impress your guests. I know you can do it!
So what do I need to make this Cheesy Hash Brown Casserole?
2 lb. Frozen Hash Browns (thawed), 1 stick plus 3 tablespoons butter (melted), 1 tsp. Salt, ½ tsp. Pepper, 1 can Cream of Cheddar soup, 16 oz. Sour Cream, ½ cup onions (chopped), 8 oz. shredded cheddar cheese, 1 cup crackers (crumbled)
Preheat your oven to 350 degrees.
In a large mixing bowl, add your thawed frozen hash browns. They don’t need to be thawed completely but the hash brown pieces need to be free of one another so you can stir all the ingredients together. You can use shredded or southern-style hash browns. I’ve done both in the past but my personal preference is the southern-style variety.
Add a can of Cream of Cheddar soup to the thawed hash browns.
Next, add a 16 ounce container of sour cream to the bowl.
You’ll need to add 1 teaspoon of salt.
Now add a ½ teaspoon of pepper.
The ½ cup of chopped onions goes in next.
Melt 1 stick of butter and pour it into the bowl. Save the 3 additional tablespoons of butter for the topping.
Finally, add in an 8 ounce package of shredded cheddar cheese.
With all the ingredients in the bowl, stir everything together. It should look like this when you’re done.
Spray a 9 x 13 baking dish with cooking spray and add the hash brown mixture.
Now it’s time to melt the 3 tablespoons of butter you put aside for the topping.
Add your cup of crumbled crackers to the bowl with the melted butter and stir it all together.
Take the cracker mixture and sprinkle it all over the top of the hash brown mixture.
Place the casserole in the oven and bake for an hour. Your topping should be golden brown and the sides of the casserole will be bubbling when it is done.

I have a recipe similar to this–but I have to boil the potatoes, then grate them–lots of extra work! I love that you use the frozen hash brown potatoes that are all ready to mix into the recipe–perfect for busy moms!
