You might think this is crazy, but my mind always goes to cruising when I think of molten chocolate lava cakes. 

Many years ago, like over ten, I went with a group of girls on a bachelorette cruise to the Bahamas. It was a short three-night cruise during the month of February. If you’re not familiar with cruising, February tends to be a month with EXTREMELY rough seas in the Caribbean. 

To say the boat was rocking would be an understatement. You honestly couldn’t walk in a straight line. It was definitely an experience like no other.

Despite the million foot waves, we ladies did our best to enjoy the cruise to the fullest. And one of our favorite parts of the cruise without a doubt was dinnertime. More specifically dessert!

The food on the ship was definitely not the greatest I’ve ever had but the dessert, molten chocolate lava cake, was some of the best I’ve tried! 

Let me put it into perspective for you. You know it was good if a group of 20-something-year-old girls were willing to intake all the calories EVERY SINGLE NIGHT of the cruise knowing they were going to be in a swimsuit for the majority of their time on the ship. 

Does that describe their heavenliness a little better for you?! I thought that might help…

Although I’ve had molten chocolate lava cake about a hundred more times after that cruise, I never tried my hand at making them on my own. I’d love to say it was because the recipe is so hard to make and I was afraid to do it, but you’ll soon see how false that is when I share the recipe with you below. 

The real reason was mainly that I didn’t have the properly sized ramekins to make the cakes in. And for whatever reason, I just never decided to go buy them. 

About a month ago, I was contacted by a company called Cestash on Instagram. They had found my account and wanted to know if they could send me some colorful ramekins to test out and review. With the amount of cooking I do on a daily basis, I instantly jumped on the offer. 

I mean let’s be honest here, it was right up my alley and I really didn’t have to think twice about it.

When the ramekins arrived, I was seriously so excited to open them. Besides the fact that they were absolutely beautiful and colorful, I finally had the perfect vessels to make molten chocolate lava cakes! I couldn’t wait to get started on the recipe.

On a side note, I do want to say that I absolutely loved everything about the ramekins. They are oven, microwave, and dishwasher-safe and are just so darn pretty. Besides cooking in them, I think they’ll make the perfect addition to a charcuterie board to hold nuts, fruit spreads, or honey!

If you think you can handle it, I’d like to share these incredibly easy and delicious molten chocolate lava cakes with you. I made them for a fun family potluck we had on Sunday and they were a huge success. “The Boys” devoured them in minutes!

½ cup semi-sweet chocolate chips, 1 stick of butter, 1 cup of powdered sugar, 2 eggs plus 2 yolks, 6 tablespoons of flour, 2 tablespoons of cocoa powder

*You’ll notice in the pictures that I attempted to use all 5 ramekins for my lava cakes. I came short on the 5th ramekin so I would recommend only using four 6 ounce ramekins for this recipe.

Begin by preheating your oven to 400 degrees.

Spray four 6 ounce ramekins with cooking spray and set them aside.

In a microwave-safe bowl, melt your stick of butter and chocolate chips until smooth. I did this in 30-second increments, stirring between each 30 seconds.

After the butter and chocolate are melted together, add your 1 cup of powdered sugar and combine.

Next, add your two full eggs and an additional two egg yolks. *Be super careful here. If your chocolate mixture is too hot you will end up scrambling the eggs.

Add your six tablespoons of flour and stir to combine.

You’ll add your two tablespoons of cocoa powder next.

Give it all a stir and your batter is done.

Simply add your batter to your greased ramekins. I placed my ramekins on a sheet pan to easily be able to add and remove them from my oven.

Cook your molten chocolate lava cakes in the preheated oven for 13 – 15 minutes. This varies by oven so I would suggest you check at the 13-minute mark and go from there.

You’re looking for the edges to fully set but the center to still be jiggly. You can see what that looks like in the picture below.

Let the molten lava cakes cool for about two minutes in the ramekins. Run a butter knife around the perimeter of the ramekin to loosen the cake.

After the two minutes, invert your cake onto a plate.

Gently remove the ramekin.

All that’s left to do is top your molten chocolate lava cakes however your little heart desires. I went for more powdered sugar, a heaping scoop of vanilla ice cream, and a strawberry for the pretty factor.

Seriously, doesn’t this look absolutely delicious? I love my molten chocolate lava cake super gooey but if this is too much for you feel free to leave your cakes in the oven a little longer.

Notes

I love my molten chocolate lava cake super gooey but if this is too much for you feel free to leave your cakes in the oven a little longer.

    1. I know, right?!?! It’s super easy. You could also make the batter earlier in the day and put it in the fridge inside your ramekins. All you have to do is make sure you pull them out in enough time to come to room temperature before baking. So awesome!
