It’s Thirsty Thursday here at the lake and I’m coming to you with the most delicious fall cocktail you’ll ever try, my friend! My Easy Apple Cider Mimosa Recipe is made using just two ingredients: apple cider and either sparkling wine, champagne, or Prosecco. But because we’re fancy around here, I took it up a notch and added a caramel and cinnamon sugar rim too!
Last week, I shared with you the process of making my warm apple cider recipe in a crockpot. Then I took that recipe and spiked it with a little Fireball whiskey…because, well, why not! Apple cider drinks for fall are where it’s at, my dear. This week, I took some of that leftover apple cider, sans the whiskey, and repurposed it into an absolutely delicious apple cider mimosa recipe. It’s really so stinking good!
I have a thing for mimosas if I’m being honest. I just love them! I’ve shared a couple of mimosa recipes on the blog already but never one that was strictly fall-related. And since I had that extra apple cider I mentioned, I thought now was the perfect timing to try and create one that was perfect for the autumn season.
When it comes to fall flavors, I’m a huge fan of anything apple and cinnamon. Not that I don’t enjoy a good dose of pumpkin (I’ve shared recipes for pumpkin squares, pumpkin lattes, and even pumpkin muffins), but my personal preference leans more towards apples and spices in the fall.

This apple cider mimosa is literally every fall flavor I love in one glass. If I take a sip of it with my eyes closed, I can almost envision myself picking barrels of apples at an orchard somewhere up in Tennessee. Maybe that’s a little overkill, but I’m telling you this caramel apple cider mimosa gives me all the fall feels.
After giving this apple cider mimosa a try, I can guarantee you’ll be wanting to sip on one of them every single Sunday this fall moving forward. And if you’re planning on hosting a brunch at all this autumn season, you’ll definitely want to have these as your fall cocktail.

Easy Apple Cider Mimosa Recipe
You’ll need: Apple cider, Prosecco, sparkling wine, or champagne
- Optional but highly recommended for garnish: caramel sauce, 2 tbsp of sugar, ¼ tsp cinnamon, apple slices
If you’re going to rim your champagne flutes, start by mixing your sugar and cinnamon together on a small plate.
Next, add your caramel syrup on another plate and dip the top of your champagne flute inside of it.
Make sure you get caramel sauce completely around the entire circumference of the rim of your champagne flute.
Roll the rim of the champagne flute through the cinnamon and sugar mixture until you have coated it all.
Doesn’t it look delicious and beautiful all at the same time?! I could jump through my computer right now!
Pour as little or as much apple cider into your champagne flute as you would like. For a stronger drink, add less apple cider and more alcohol. My personal preference is to fill my glass about ¼ of the way up with apple cider.
Carefully fill the rest of your glass with Prosecco, sparkling wine, or champagne.
I decided to be ultra fancy and added an apple slice to the party as a garnish but that is totally optional. I love the way it fizzes when you drop it in your champagne flute. What can I say, the littlest things amuse me!
Although I’m partial to the flavor of cinnamon, I know some people are not. Instead of rimming your champagne flutes the way I suggested above, try dipping your caramel rimmed glass into brown sugar instead. It’s equally as yummy and delicious!
