Is it just me, or are you tired of cooking just as much as I am? I don’t know about you, but I’m seriously burnt out over here at the lake and just need a break from it all.

I feel like I have literally been going a mile a minute since the virus took over our world back in March. While the majority of the population was hanging out in yoga pants and binge-watching Netflix series, I was one of the rare individuals that decided to add more on my plate than I had before the pandemic started. I’m psycho like that apparently!

I have been adding even more content on my blog, cooking every single meal of the day plus snacks, working on house projects, and a million other things I can’t think of right now because I am so exhausted. I’m spent! Anyone else with me?

If it were up to me, my family would be eating cereal for breakfast, lunch, and dinner at this point. I’d be nice about it and make sure to buy a whole mess of cereal options so they don’t get bored. I would also grab some different milk options for variety. But if I told my husband and 17-year-old son that they’d be eating cereal for the next month straight, they might have a heart attack. 

Part of me wants to threaten them with that option just so I can tell them if they don’t like it they can do the cooking for the family instead…What are your thoughts? Do you think I should try it?!  It might be kind of fun.

Obviously, that’s not something I would really do. I can be mean but not that mean. I’m completely being a drama queen at the moment but sometimes a girl just needs to let it out. Thanks for listening, by the way. I promise I’m going to get to the recipe here in a second. Pinky swear!

To lessen the load on my stressed-out self, I’m trying to create really easy recipes that are hearty enough to please “The Boys” but simple enough to make in minutes. So instead of making an entire spread for lunch the other day, I got the great idea to whip together a yummy appetizer instead. 

Now don’t freak out, this appetizer has protein, dairy, and technically a veggie if you categorize pickles as vegetables. “The Boys” may have had to eat a good 10 or so of them a piece, but they were definitely full when they were done inhaling them. I would call that a success in my book!

To make this a little fancier, I also whipped together a delicious honey mustard dressing to dip the Cuban sandwich skewers in. Although I prefer my Cuban sandwich with mustard, my husband Patrick prefers mayonnaise so I combined them to make us both happy. I’m smarter than one might think, you know!

When the world eventually goes back to normal, these Easy Mini Cuban Sandwich Skewers will be the perfect addition to your party or gathering. Nothing beats delicious finger food! Easy Mini Cuban Sandwich Skewers

Block of swiss cheese, a package of ham (I used honey ham), baby/petite pickles, and skewers

Easy Mini Cuban Sandwich Skewers

Honey Mustard Dressing

¾ cup of mayonnaise, 3 tbsp of honey, 2 tbsp of yellow mustard, 1 ½ tbsp of lemon juice, 2 tbsp of orange juice

Begin by cutting your block of swiss cheese into bite-sized cubes like so.

Open your jar of pickles, next. Aren’t these just the cutest?!

Add your baby pickle to your skewer first.

The ham comes next. I cut my ham into strips and folded it like a little accordion before adding it onto the skewer with the pickle.

Last, add your cube of swiss cheese.

Place it on a platter and continue the process until you’ve made the desired amount.

For the honey mustard dressing, add all your ingredients in a bowl.

Whisk everything together really well making sure to incorporate all the ingredients together.

Add your honey mustard dressing to a small bowl and you’re ready for dipping.

You can lay your skewers flat on a serving dish or platter but I think they look absolutely adorable standing up straight instead! Don’t you agree?

    1. I feel like any food in NYC is the best. You must try a Cuban sandwich in either Tampa or South Florida because that’s where they originated. I am obsessed with them!
