Potato latkes are a must during Chanukah! Fried potatoes with a side of sour cream and applesauce make these golden beauties a must try side dish.

  • 10 Russet or baking potatoes
  • 2 medium onions
  • 2 large eggs
  • ¼ cup Matzo Meal or flour
  • 1 tsp salt
  • ½ tsp pepper
  • vegetable oil for frying
  • sour cream and applesauce for serving (optional but HIGHLY recommended)
  1. Begin by peeling your potatoes. Place in a bowl of cold water to slow down the discoloring process.
  2. Cut and remove the skin from the onions.
  3. Grate the potatoes and onions using a food processor or box grater. Alternate back and forth between the onions and potatoes.
  4. Once you've grated the potatoes and onions, take a kitchen towel or cheesecloth and wring out as much water as you can from the potatoes.
  5. Once you have drained the potatoes, you can add your eggs, salt, pepper and matzo meal.
  6. Mix everything together.
  7. Pour oil into your frying pan and heat it to 350 degrees.
  8. Use a large ice cream scoop to have a uniform size amongst the potato latkes. Place one scoop of the potato mixture into the hot oil and gently press down with the back of the ice cream scoop to flatten the mixture into a pancake.
  9. Cook approximately 2 minutes on each side. You are looking for the edges to be golden brown!
  10. Once the potato latkes are done, place them on a baking sheet lined with paper towel to drain.
  11. Immediately sprinkle with salt.
  12. When ready to eat, serve with a side of applesauce and sour cream.
  13. Enjoy!
