Serves: 48 mini muffins
  • 4 cups apples (peeled and diced)
  • 1 cup sugar
  • 1 ½ cups walnuts (chopped)
  • 1 ½ cups raisins
  • 2 eggs
  • ½ cup vegetable oil
  • 2 tsp vanilla
  • 2 cups flour
  • 1 ½ tsp baking soda
  • 2 tsp cinnamon
  • ⅛ tsp salt
  • 1 stick unsalted butter (softened)
  • 2 tbsp Powdered sugar
  • 3 tbsp Strawberry jelly/jam
  1. Preheat oven to 375 degrees.
  2. Spray a mini muffin tin with cooking spray and set aside.
  3. Place apples, sugar, walnuts, and raisins in a large mixing bowl.
  4. Stir the ingredients together and set the bowl aside.
  5. In a different bowl, whisk together the eggs, oil, and vanilla.
  6. Pour the egg mixture into the bowl with the apple mixture and stir.
  7. In a third bowl, sift together the flour, baking soda, salt, and cinnamon.
  8. Carefully stir the flour mixture into the apple mixture until just combined making sure not to over mix.
  9. Using an ice cream scoop or spoon, and fill the mini muffin tins with the batter.
  10. Bake in the oven for 8-10 minutes.
  11. While the muffins are baking, whip up the strawberry butter.
  12. Place the softened butter, powdered sugar and strawberry jelly inside a standup mixer and combine.
  13. Transfer butter to a serving bowl.
  14. After 8 - 10 minutes, pull the muffins out of the oven.
  15. Wait for the muffins to be cool enough to touch and then transfer them to a wire rack.
  16. Serve them warm with the strawberry butter or let them cool completely and transfer them to an airtight container.
