Italian-Inspired Roasted Corn on the Cob
Italian-Inspired Roasted Corn on the Cob is the perfect way to prepare corn inside and still give it that grilled taste. This easy side dish is perfect for all your summer gatherings and BBQs. Garlic, olive oil, and parmesan cheese add a special touch to this corn!

  • 4 ears of corn
  • ½ cup olive oil
  • 2 garlic cloves (minced)
  • ½ cup grated parmesan cheese plus a little extra for garnish
  1. Begin by shucking your corn on the cob (removing the husk and stem) and place them on their own individual pieces of aluminum foil big enough to wrap them up completely.
  2. Mince your two garlic cloves and grate your parmesan cheese.
  3. In a small saucepan, heat your ½ cup olive oil over medium heat.
  4. While the oil is heated through, add your two cloves of minced garlic to the saucepan for just a minute. Be very careful to just keep it on for a minute and not to brown the garlic.
  5. Allow the oil to cool for a couple of minutes before tossing your grated parmesan cheese into the saucepan.
  6. Stir everything together.
  7. Smother all four ears of corn with the garlic and cheese mixture.
  8. Wrap the corn up tightly and place them in a 350-degree oven for 40 minutes. Halfway through the cooking time (at 20 minutes), flip over the corn.
  9. After forty minutes, open up the aluminum foil and set the corn on the cob under the broiler. I let mine go for about 5 minutes but make sure to keep an eye on them.
  10. Pull the charred corn out of the oven and sprinkle it with the remaining parmesan cheese.
  11. Enjoy!
