Puerto Rican Sofrito
The secret to any successful Puerto Rican dish is having the perfect sofrito recipe.   • 1 green bell pepper (seeded and roughly chopped)
  • 1 red bell pepper (seeded and roughly chopped)
  • 1 package of aji dulce peppers** (seeded and roughly chopped)
  • 3 Cubanelle peppers (seeded and roughly chopped)
  • 3 Spanish onions (roughly chopped)
  • ½ cup of garlic cloves
  • 1 bunch of cilantro
  • 1 bunch of recao/culantro**
  • ¼ cup olive oil
  1. Once everything has been rinsed and seeded, begin adding your ingredients in small batches to either a food processor or blender.
  2. Set your food processor on high and let the ingredients break down until they are the consistency of smooth salsa.
  3. Continue doing batches until all the ingredients have been broken down.
  4. Drizzle in your ¼ cup of olive oil at the end and give it a final whirl.
  5. Refrigerate what you will use in the next two weeks in an airtight container.
  6. Freeze the extras in small containers and ice cube trays.
