It was like the minute I opened my eyes the first thing I started thinking about was what I was going to eat for breakfast. I’m usually a creature of habit. I make Patrick and I egg white omelets pretty much every single day. It’s simple and easy to make, plus Patrick can take it in the car with him on his way to work. But for today, waking up to a stomach that felt like it was going to eat itself, I knew my omelet wasn’t going to cut it. Eggs in the Basket, however, that would do the trick!

I may have a little bit of an idea as to why I was so stinking hungry when I woke up this morning. Last night I had one of my favorite dinners! It was Patrick’s day off so the three of us decided last minute to go out. Where did we go? To a Japanese hibachi steakhouse. I.Love.Those.Places. So do “The Boys”! Fried rice, noodles, vegetables and filet mignon. I ate myself silly! I came home, got in my pajamas, and passed out until this morning when I was so rudely awakened by my alarm and a grumbling stomach…

And now we can fast-forward to this morning. My growling stomach needed something a little bit heavier than my usual omelet. Eggs in a Basket has become one of my favorite items to whip up because it is an All-In-One breakfast dish. Your “basket” is bread and it’s filled with an egg! This breakfast takes maybe 5 minutes to prepare from start to finish which is another added bonus. 

You can always make this breakfast a little more substantial if eggs and toast just aren’t enough. Step things up a notch by adding bacon or a side of fruit. Stores carry microwavable bacon these days that heats up in like 15 seconds so you can put that on the side without adding any additional cooking time. Yes, I know that from experience. I do have a husband and teenage son I have to feed! 😉

One of my favorite parts of making Eggs in a Basket is you can be festive with it! How in the world can you do that? Simple! To make Eggs in a Basket, you must make a hole in the center of your bread to add the egg. I normally just cut out a simple circle from the center using a glass, but really any shape will do. Break out those cookie cutters and get creative!

Easter: egg, carrot, bunny

St. Patrick’s Day: shamrock

Valentine’s Day: heart, cupid

Birthday: candle, gift, cake

Winter holidays: Christmas Tree, menorah, snowman

The possibilities are endless!

So what do I need to make Eggs in a Basket?

2 pieces of bread, 2 eggs, butter, seasonings (I used salt, pepper and garlic powder)

Begin by making the hole in the center of your bread. Place the object you are using to remove the hole from the bread directly in the center. Press down gently and slightly shimmy the cookie cutter (or another object), back and forth to cut through the bread.

Remove the “hole” from the center of the bread. Don’t throw it away though! It’s perfect for dipping in the egg yolk.

Melt the butter over medium heat in a skillet.

Eggs in a BasketCarefully crack an egg into the center of each piece of bread.

Eggs in a BasketSprinkle with your seasonings. I used a little salt, pepper, and garlic powder. I like the “garlic toast” taste but feel free to leave out the garlic if it isn’t your thing!

Eggs in a Basket | Easy Breakfast IdeasMake sure to keep a close eye on your “holes”. Since they are so small, they cook faster than the eggs in their baskets. I flipped the holes over before I flipped over the baskets.

Eggs in a Basket | Easy Breakfast IdeasWhen you decide to flip over your eggs in the basket is a personal preference. Everyone likes their eggs done a certain way. I like to still have runny yolks so when I cut into the egg it pours all over the bread and I can mop it up with the toasted bread holes. Here’s a picture of when I turned mine over. It was after about 3 minutes. Note: If you like your eggs more well done, you might want to lower your burner to medium-low. You don’t want to burn your toast while waiting for your eggs to cook.
