English Muffin Pizzas

Looking for an easy dinner option that everyone in your family will go crazy for? Look no further than these English Muffin Pizzas that can be prepared and on the dinner table in less than 10 minutes. Dad likes pepperoni pizza. Mom likes the Hawaiian variety with ham and pineapple. The kids are picky and will only eat cheese pizza. No worries! These English Muffin Pizzas are customizable to meet everyone’s pizza needs.

Flashback! We are headed back to the late 80’s, early 90’s today. These English Muffin Pizzas are a throwback to my own childhood. My mom made these English Muffin Pizzas for me way back when and I loved them so much.

I was such a picky eater as a child. My favorite phrase come dinner time was, “I’m not hungry, I’m just thirsty!” It’s hard to believe, but this lady who’s talking to you right now had zero interest in food. Shocking, I know.

I was basically just a head full of hair in my younger days. I’m really not joking either. My hair probably weighed more than my entire body put together. You can kind of see my hair in this photo. It’s from a beauty pageant I was participating in. When asked what my favorite show was I replied, All My Children. My grandma had me watching soap operas from day one. Wonder if that’s how my reality t.v. show obsession began 🙂

This is me at a Halloween party when I was in Kindergarten. The smallest size available for the cheerleading uniform I’m wearing was a 2T. Not only did my mom have to purchase the smallest size for me, but she still had to have it taken in by a seamstress because I was so tiny. Oh, the good ol’ days! Hahahhahaha!

Despite my hatred for food, I can distinctly remember enjoying these English Muffin Pizzas as a little girl. The fact that I could help make them and pick out my own ingredients made me excited to eat them. Like most children I know, I loved being able to be a part of making the meal I was about to eat. I’m sure I had just a couple of bites of my pizza, but that was a couple more than I would have had on a normal day.

Now that I’m a parent, I look at these English Muffin Pizzas from a different angle. I can imagine that my mom enjoyed making these for me for multiple reasons. The obvious is the fact that it was something I would actually eat so she knew I wouldn’t fight her on it. I’m sure she also enjoyed the fact that it takes literally less than 10 minutes to put together which is perfect for a busy weeknight dinner. Lastly, I’m sure she enjoyed having me help her in the kitchen. I mean really, who wouldn’t want me helping them in the kitchen?!?!

I’m going to share my recipe for these English Muffin Pizzas with you, but I want you to know that almost everything in this recipe can be switched to meet your family’s needs. Feel free to get a different variety of English muffins like the whole wheat version, choose Ragu pizza sauce or homemade if you have some extra in the freezer, and pick any toppings to add on top. Sky’s the limit here folks!

So what do I need to make these English Muffin Pizzas?

1 package of English muffins, 2 tbsp butter (melted), 1 tsp garlic powder, 1 jar pizza sauce (I used Prego), 8 oz. package of shredded mozzarella cheese, toppings of your choice (I used mini pepperoni, bell pepper, mushrooms, pineapple, ham)

Put your oven on broil.

Place your 2 tablespoons of butter and 1 teaspoon of garlic powder into a microwavable bowl and put it in the microwave for about 30 seconds.

Line a large cookie sheet with aluminum foil and grab your English muffins. As you can see, I went with the original version for my pizzas.

Cut the English muffins in half and place them on the cookie sheet. Brush the melted butter and garlic mixture on top of the English muffins like so.

Place the cookie sheet under the broiler for 1 minute. I literally did it for one single minute! You can do it longer but they burn REALLY fast so don’t walk too far from the oven.

Once out of the oven, spoon sauce over each of the muffins. Again, this is a personal preference. I used about ¾ of the jar of sauce when I made my pizzas.

Next comes the shredded mozzarella cheese. Sprinkle it all over the top of each of your English muffins.

All that’s left is to prepare and add the toppings. I cut a green bell pepper and some mushrooms to add to a couple of our pizzas.

We added mini pepperoni pieces to a few pizzas as well.

I also made a Hawaiian variety with pineapple and ham and left 3 plain cheese.

Once your English muffins are all topped, place the cookie sheet back under the broiler until the cheese gets all brown and bubbly. That process took 2 ½ minutes for me. Again, the broiler cooks fast so please keep an eye on your pizzas.

Note: It might be hard to tell, but I attempted to make a face on this pizza. Kids love doing this! Let them be creative when assembling their English Muffin Pizzas.

It really is as simple as that! These English Muffin Pizzas are so much fun to make and the perfect dinner for a busy weeknight.
