Happy Valentine’s Day Stud Muffin! Do you have a stud muffin in your life? I’m one lucky lady because I have two of them. Before you start jumping to conclusions and click the big X button in the upper-right corner of your screen, let me elaborate. “The Boys”, as I like to call them, are my husband, Patrick, and son, Zach. Truth be told, if they knew I was referring to them as stud muffins to the entire Internet they might be just a little embarrassed. So let’s just keep this our little secret. Is that okay with you?
Valentine’s Day is the day of love and when I think about gifts to give “The Boys” on Valentine’s Day I always want to shower them with some of their favorite things. What do “The Boys” and almost every other boy I’ve ever met love? Food of course! Why not begin your day with these scrumptious Mini Fruit and Nut Muffins with Strawberry Butter. It’s the perfect way to start off Valentine’s Day.
My Mini Fruit and Nut Muffins are loaded with walnuts, raisins, and apples. They are perfectly sweet with just a hint of spice and warmth from the cinnamon added to the mixture. Adding a little dollop of strawberry butter on top of the muffin just takes it to a whole different universe!
One of the best things about these Mini Fruit and Nut Muffins is that they can be made ahead of time. Whip up a batch the night before and have them on hand for Valentine’s Day morning.

You’ll need:
- Happy Valentine’s Day Stud Muffin Labels (Free in my resource library. Fill out the form below for the password.)
- Cellophane bags (purchased mine at Dollar Tree)
- Ribbon
- Hole punch
- Scissors
- Muffins of course!
Fill a cellophane bag with mini muffins. Tie up the cellophane bag with ribbon. Print out your “Happy Valentine’s Day Stud Muffin” labels on card stock and carefully cut them out. Use a hole punch to create a hole to string your ribbon through. Add your label and you’re finished!
If you aren’t making a beeline out the door on Valentine’s Day morning, take the time to pop these bad boys in the microwave for about 10 seconds to warm them up. Spread the strawberry butter on top and let it melt all over the muffins. If your butter is cold, place it in a microwave-safe dish and heat on DEFROST for about 10 seconds. That’s the perfect amount of time to make the butter nice and spreadable. Delicious!
So what do I need to make Mini Fruit and Nut Muffins with Strawberry Butter?
4 cups apples (peeled and diced), 1 cup sugar, 1 ½ cups walnuts (chopped), 1 ½ cups raisins, 2 eggs, ½ cup vegetable oil, 2 tsp vanilla, 2 cups flour, 1 ½ tsp baking soda, 2 tsp cinnamon, ⅛ tsp salt, 1 stick unsalted butter (softened), 2 tbsp Powdered sugar, 3 tbsp Strawberry jelly/jam
Preheat oven to 375 degrees.
Spray a mini muffin tin with cooking spray and set aside.
Place apples, sugar, walnuts, and raisins in a large mixing bowl.
Stir the ingredients together and set the bowl aside.
In a different bowl, whisk together the eggs, oil, and vanilla.
Pour the egg mixture into the bowl with the apple mixture and stir.
In a third bowl, sift together the flour, baking soda, salt, and cinnamon.
Carefully stir the flour mixture into the apple mixture until just combined making sure not to over mix.
Using an ice cream scoop or spoon, fill the mini muffin tins with the batter.
Bake in the oven for 8-10 minutes.
While the muffins are baking, whip up the strawberry butter.
Place the softened butter, powdered sugar and strawberry jelly inside a standup mixer and combine.
Transfer butter to a serving bowl.
After 8 – 10 minutes, pull the muffins out of the oven.
Wait for the muffins to be cool enough to touch and then transfer them to a wire rack.
Serve them warm with the strawberry butter or let them cool completely and transfer them to an airtight container.

You can be creative with this recipe. There’s no reason why you can’t change things up in this recipe to satisfy your own personal preferences. Not much of an apple fan? Instead of using 4 cups of apples in the muffin recipe switch it out for another hard fruit like pears or peaches. The same thing goes for the strawberry butter. Replace the strawberry jelly with apricot, peach, or even grape jelly. The possibilities are endless.
