Valentine’s Day is in just two weeks and I have the perfect meal to make for that special someone in your life. I guarantee it will be a hit with your sweetie! It definitely won me some HUGE brownie points with “The Boys” the other night when I cooked them up this Mouthwatering Steak with Blue Cheese Butter.

This steak is a slam dunk, “In Your Face”, drop the mic, kind of meal.

Have you ever had a meal so good that you were left speechless? This is that meal, people! I served it to “The Boys”, and if it weren’t for the television on in the background, I swear you could’ve heard a pin drop. They didn’t have a second to talk because they were too busy devouring their steak. Every last piece of it might I add.

The steak is delicious on its own, but really it’s just the vessel for the out-of-this-world blue cheese butter that gets melted all over the top. Oh my goodness, I am actually drooling as I write this. Don’t let the recipe scare you if you aren’t much of a blue cheese fan. You don’t get a pungent blue cheese flavor at all here. It’s almost like the blue cheese just gives you that perfect salty addition to the top of your steak. Yum!

I have made this meal with all different cuts of meat. In our family we like New York Strips, Filet Mignons, and Rib Eyes. How do I decide what steak to use? Obviously, the cheapest one is the winner. Whatever happens to be on sale that week in the grocery store is what I buy. This week it was Rib Eyes so that’s we got! You can pick whatever cut of meat that makes you and your family happy.

So what do I need to make this Mouthwatering Steak with Blue Cheese Butter?

Rib Eye Steaks (or any other cut of meat you choose), salt and pepper, olive oil, 4 tablespoons/½ stick of salted butter (softened), 2 tablespoons green onions (chopped), ½ cup of crumbled blue cheese

For the butter:

Begin by pulling out your butter so it has time to soften. You want to soften your butter to make it easier to incorporate into the other ingredients for the topping. *If you forget to pull out your butter, place it in a microwave-safe bowl and heat it for about 10-15 seconds on the DEFROST setting.  

Chop your green onions and add 2 tablespoons to the bowl with the butter. Add ½ a cup of blue cheese crumbles as well.

Mouthwatering Steak and Blue Cheese ButterStir the ingredients together and set the bowl aside until your steaks are done.

This is my method for cooking steaks. Please note that steaks vary in size and thickness which will alter your cooking time. Unfortunately, you’ll have to judge when your steak is cooked to your preferred temperature. See below for an easy trick to determine the doneness of your steak.   

Preheat your oven to 350 degrees.

Pull out your steaks from the refrigerator and season both sides with salt and pepper.

Mouthwatering Steak and Blue Cheese ButterAllow the steaks to sit on the counter for at least 10 minutes before you begin cooking them. Taking the chill off the steaks allows them to cook more evenly. Just a Fun Fact I learned from the Food Network 🙂

While your steaks are coming to room temperature, pull out a heavy-bottom pan that is oven safe. Because of the thickness of these steaks, you’ll need to brown them on both sides on the stovetop and then place them in the oven to finish cooking.

Drizzle some olive oil in the bottom of your pan and heat it up over medium-high heat. You want the pan to be really hot so when you place the steaks inside you’ll get that beautiful brown-seared crust all over them.   

Mouthwatering Steak and Blue Cheese ButterPlace the steaks into the hot pan and allow them to cook for about 2-3 minutes on the first side. You’ll know when they are ready to flip because they will easily pull away from the bottom of the pan.

Mouthwatering Steak and Blue Cheese ButterPlace the steaks in the oven and allow them to cook for 4-5 minutes for a steak cooked to a medium temperature.

Mouthwatering Steak and Blue Cheese ButterHere’s that little trick I promised for checking your steak’s temperature. Check for doneness with a simple tool: your finger! A rare steak feels soft and spongy, medium springs back a bit when pressed, and well-done feels firm.

Carefully remove the pan from the oven using heat-protected oven mitts. Remember the handle is hot! I learned this lesson the hard way once and the pain I felt was excruciating. Ouch!

Mouthwatering Steak and Blue Cheese ButterPlace the steaks on dinner plates and top with blue cheese butter immediately. Let the steaks rest on the plates for about 5 – 10 minutes so that the juices stay put and don’t come pouring out when you cut into them. After all that work you wouldn’t want a dry steak! Plus, it allows that delicious blue cheese butter to melt all over the top.

Mouthwatering Steak and Blue Cheese ButterWhile you wait you can dress up some baked potatoes with butter, sour cream, cheese and a sprinkle of green onions. That’s what we did, and let me tell you, it was heaven on a plate!

Mouthwatering Steak and Blue Cheese ButterFeel free to add a vegetable to your meal if you must. “The Boys” were perfectly happy without one. It freed up more room in their stomachs!
