Champagne and New Year’s Eve go together like peanut butter and jelly. You can’t have one without the other. Don’t you agree?

Even if someone is normally not a drinker, you’ll find that they most likely will take a sip of champagne at midnight. It’s the only way to ensure a happy and healthy year ahead. It is as important as making the first toast at a wedding!

My New Year’s Eve champagne cocktail idea is the only drink you’ll want to have in your hand when the ball drops in Time Square. And that’s absolutely a promise! I mean, who doesn’t want a fancy champagne cocktail on New Years’?

This adult concoction is bursting with raspberry flavor because of the addition of Chambord. Have you heard of Chambord before? It’s a black raspberry liqueur that’s literally to die for. It’s a French liqueur which kind of makes this a French Champagne Cocktail masterpiece. At least in my book it does!

The Champagne

I was super lucky to find raspberry-flavored champagne at one of my recent visits to Cooper’s Hawk. Do you have one of these restaurants close to you? They’re fairly popular in Florida but I know they also have restaurants scattered around the rest of the United States.

If you don’t have a Cooper’s Hawk nearby where you can purchase this raspberry champagne, a great substitute would be Banfi Rosa Regale sparkling wine. You can find it at pretty much any liquor store and even at Target. It’s also bursting with fruity flavors such as strawberries and rasberries.

If fruity champagne or sparkling wine isn’t your thing, feel free to substitute any variety of champagne or sparkling wine you prefer. You really can’t go wrong here!

On a completely side note, this champagne stopper is a must! It was a recommendation from my virtual-friend, Brittany, and I’m so happy I bought it. Now I don’t have to cover my half-used champagne bottles with aluminum foil anymore. Yes, I embarrassingly admit to doing that until recently!

The Juice

For this Raspberry Champagne Cocktail recipe, I chose to add a teeny tiny bit of pineapple juice to the party. I love the extra bit of sweetness it gives to the overall flavor of this New Year’s Eve cocktail. It’s the perfect addition to take this cocktail to the next level.

If pineapple juice isn’t your thing, feel free to substitute orange juice for another sweet option. You can also add lime juice for a more sweet and tart combination.

The Chambord

Like I mentioned above, Chambord is a black raspberry liqueur made in France. Admittedly, it is a pricer liqueur coming in at around 20 bucks for a 375-milliliter bottle. It’s an absolute luxury in a bottle and a welcomed splurge to celebrate the New Year with. If ever there was a time to be fancy, this is it. 

If you’re looking to save a buck, Razzmatazz is another raspberry liqueur at a much cheaper price bracket. Honestly, though, the taste of Chambord can’t be mimicked. Spring for it if you can. It’s worth every penny you will spend on it.

The Garnishes

You know me and my attempt to be extra when it comes to each and every one of my cocktails. This New Year’s Eve champagne cocktail isn’t any different. I feel like I’d let you down if I did it any other way!

To make this drink sparkle, I added some silver sparkling sugar to the rim of my champagne flute as well as added edible silver glitter inside of it. Make sure you don’t forget to add some fresh raspberries to your champagne flute right at the end!

Raspberry Champagne Cocktail

1 oz. Chambord (Razzmatazz can be substituted), ½ oz. Pineapple Juice (orange juice or lime juice can be substituted), champagne or sparkling wine, fresh raspberries (optional for garnish), silver sparkling sugar (optional for garnish), silver edible glitter (optional for garnish)

If you’re planning to rim your champagne flute, carefully run a fresh raspberry around the edge of your glass.

Add some silver sparkling glitter to a plate and dip the champagne flute inside of it. Carefully roll the champagne flute around in the sugar until the entire rim is covered.

Inside the prepared champagne flute, add your Chambord and pineapple juice. 

Carefully top it with champagne. If you plan to add raspberries as a garnish, make sure not to fill the glass all the way to the top.

Before adding raspberries (if you plan on doing so), sprinkle in some edible silver glitter for an extra bit of sparkle.

Top with a few fresh raspberries and you’re all set!
