Happy Tequila Thursday, my friends! I’m switching things up today and featuring a cocktail that doesn’t actually include tequila. Hmmm, maybe I should switch the name this week to Thirsty Thursday instead. That sounds a little more fitting, don’t you think?!

If you’ve been following along with my Tequila Thursday series, you know I’ve spent the last couple of weeks creating cocktails all featuring my favorite liquor…TEQUILA! I’ve made chocolate and cafe tequila pudding shots, tequila sunrises, and strawberry margaritas.

For the record, those strawberry margaritas are blowing up on Pinterest. I’m loving that so many of you are making the recipe and then adding a picture of your final product to the original pin. 

Did you even know that you could do that?! You’ll find the option to add a picture or comment on the bottom of the pin you are using. This is a great way to give some love to the creator of a recipe, DIY idea, decorating idea, etc. that you really liked! Plus, it helps others who are looking at the pin see if it’s worth their time.

As much as everyone on Pinterest has loved my strawberry margarita recipe, we have equally indulged in them here too. In that post, I showed how to make your very own strawberry simple syrup to add to your cocktails. I also made a blackberry and blueberry variety of simple syrup because I had the berries on hand and it’s so easy to make. 

Here’s how you do it: You add a cup each of water, sugar, and berries to your saucepan and heat everything over medium heat. You continue cooking about 5 minutes or so until the berries break down and the sugar dissolves. Strain the liquid to remove the seeds from the mixture and that’s it! You can see the full directions with pictures and even a video on my margarita post.

All my strawberry simple syrup got used up with all the margaritas I’ve been making as of late but I still had some blackberry simple syrup to use up. I immediately started thinking about cocktail ideas to use it in.

I wanted to change things up a little this week and feature a different liquor in my drink. As much as I love tequila, I knew it was about time I tried my hand at something a little different. 

My next favorite liquor is probably rum, coconut rum to be exact, but I was out of Malibu so I had to come up with something else instead. Drinks with rum…a light bulb went off almost instantly!

Recently, I had one of the best mojitos of my life at a cocktail competition party I attended with Patrick back in February. Our friends Jane and Bob brought the mojito to the competition and I absolutely loved it! I made sure to get the recipe from my friend, Jane, the very next day.

Jane and Bob’s mojito recipe also featured blackberries but they added them whole inside the cocktail. How I decided to make my own spin on the recipe was to replace the normal simple syrup with my blackberry-infused variety instead!

If you want a traditional mojito, you can absolutely make it from this recipe. All you need to do is replace the blackberry simple syrup for a basic simple syrup. For a basic simple syrup, add one cup each of water and sugar into a saucepan and heat it up over medium heat. Once the sugar dissolves, your simple syrup is done. See how “simple” it is!

Cocktail ingredients

  • 1 oz./2 tablespoons of lime juice, 1 oz./2 tablespoons of blackberry simple syrup, 2 oz./4 tablespoons of silver rum (I used Bacardi), 1 – 2 oz. of club soda, 6 – 10 mint leaves, blackberries and lime wedges (optional for garnish)

  • 1 cup each of water, sugar, and blackberries

You’ll want to begin by making your blackberry simple syrup. It’s so easy to make! 

Simply place your water, sugar, and blackberries in a saucepan and heat over medium heat. You’ll want to heat the mixture until the blackberries have broken down and the sugar has completely dissolved. 

You’ll then want to pass the blackberry simple syrup mixture through a strainer to remove the berry seeds. You’ll want to let the mixture cool before adding it to your cocktail.

Once you’ve made the blackberry simple syrup, you’ll be able to store it in your fridge for a good 2 to 3 weeks. A batch of blackberry simple syrup can make about 8 to 10 of these mojitos.

With your blackberry simple syrup cooled, it’s time to make the cocktail.

Add your lime juice, mint leaves and blackberry simple syrup to an empty cocktail shaker. Muddle the three ingredients together making sure to really break up the mint so you can release the flavor from it! Note: You don’t want to add ice yet because it will get in the way of really breaking down the mint into the other two ingredients.

Once you’ve muddled those ingredients together, add ice to your shaker along with the rum and give everything a good shake!

Carefully transfer your cocktail into a tall collins glass and top it with some club soda.

Add in some blackberries and lime wedges as garnish if you so choose!
