What happens when St. Patrick’s Day falls on Taco Tuesday? You obviously combine the two events and make one epic treat to encompass both occasions. Come on, don’t you know how I roll at this point…

My level of craziness should just be a normal thing for you at this point. Hehehehehe!

Shamrock cinnamon sugar chips are made with just four simple ingredients: flour tortillas, cinnamon, sugar, and melted butter. To make them festive, I simply used different sized shamrock cookie cutters. Easy peasy, friends!

Because you’re most likely ditching your typical tacos tonight for a slow-cooker corned beef recipe instead (or is that just me!), you might find yourself going through some withdrawals and craving those Mexican flavors. 

How does one beat those negative feelings? By making Shamrock Cinnamon Sugar Chips, of course!

The method to make these easy cinnamon sugar chips is all you need and then you can truly adapt this recipe for any holiday or celebration. You can do this by simply changing up your cookie cutters.

Or forget about the cookie cutters all together and cut your flour tortillas into fours with a kitchen knife!

Or forget about cutting them, period! Bake them whole and then break the flour tortillas into smaller pieces once they’ve cooled. Yes, this recipe is THAT easy and versatile. Again, you should know me by now!

Before I give you the recipe, I wanted to give you a little backstory on these easy cinnamon sugar treats.

Back when Zach was in preschool, myself and one of my neighbors started a business we called, Little Chefs Club. We would travel to different preschools and clubhouses around the Tampa area to provide themed cooking classes for little ones. 

Each class was one hour and revolved around a theme. Most of the themes were seasonal such as St. Patrick’s Day or Springtime. During the one hour class, we would sing songs about the theme of the week, read a book, rotate through centers, and then finally make an easy non-cooking recipe. 

Our classes always followed this format except in the summer when we would provide week-long camps that lasted a couple of hours instead of one like we normally did. With the added time, we were able to do more extravagant activities and recipes with the kiddos.

It was during one of these summer camp days that I made cinnamon sugar chips for the first time. The theme of the day was the ocean so we naturally called our easy snack, Ocean Chips! Instead of using a shamrock cookie cutter as I did for today’s recipe, we used ocean-themed cookie cutters instead.

The process we took to make these treats is a bit different from the one I used today, but here is the original recipe for “back in the day”. So cute, right?! We made sure to have 6 easy steps in each of our recipes with the last one always being to eat.

Shamrock Cinnamon Sugar Chips

Here’s what you need: 3 flour tortillas, 3 tablespoons butter (melted), 2 tablespoons sugar, 1 teaspoon cinnamon

*ice cream and St. Patrick’s Day cups are optional, but highly recommended!

Preheat your oven to 350 degrees.

Begin by using your shamrock cookie cutter to cut out shapes from your flour tortillas.

Once you’re done cutting out your shapes, add your shamrocks to a lined cookie sheet.

Next, combine your sugar and cinnamon together in a bowl and set it aside until you’re ready to sprinkle it onto your shamrocks.

Brush one side of the shamrocks with the melted butter.

Generously sprinkle them with the cinnamon and sugar mixture.

Carefully flip over the shamrocks and complete the same process on the opposite side.

Place your cookie tray in your preheated oven and bake for 10 to 12 minutes or until your tortillas have turned a nice golden brown.

Allow your shamrocks to cool for a few minutes so the sugar hardens making the flour tortillas crispy and more chip-like.

You can eat these Shamrock Cinnamon Sugar Chips just like this but since it’s a holiday it makes more sense to GO ALL OUT instead.

I served us up some ice cream, mint chocolate chip and pistachio, in adorable shamrock cups I got at the Dollar Tree and then used the cinnamon chips as edible decorations. Not only do they look fabulous, but they taste even better. I know you’ll absolutely love these!
