I’ve been baking like a crazy person here at the lake these past couple of days. One of my favorite treats to whip up during the holiday season are these Simple and Delicious Pretzel Rolo Bites. How could you go wrong with only 3 ingredients and a cooking time of 3 minutes? Really, these Pretzel Rolo Bites are that easy you can make them blindfolded.
Can I start by taking a moment to pat myself on the back? I’m super proud of myself because this is the second year in a row I have made treats and then put together holiday platters for my family and friends. Way to go, Tiffany!
Here’s my reality. I always have these great plans to do so much over the holidays but the craziness of the season takes over and my big plans become nothing short of a bust. This year, using my Holiday Planner, I organized my time and made it a point to add baking to my To-Do List.
Why did I consider baking a priority on my To-Do List this year? It’s something I truly enjoy doing. I love creating special treats and then gifting them to my family and friends. Everyone is so appreciative and it makes me happy because I know they’re happy. It’s not a job for me…it’s fun!
Often the things that get scratched off our lists are the things we enjoy. Why is that? I think about this all the time and it drives me crazy. We become overwhelmed with all the day to day responsibilities we have and start taking away things we consider to be unimportant. Unfortunately, the things we consider to be unimportant usually have to do with personal things we do for ourselves to make us content and happy. That’s no bueno!
I’ve learned that I have to be intentional when it comes to doing things I WANT to do. It is possible to get everything done but you have to be organized with your time and plan things out. Think about the things that consume your days. Determine what is really important and what is just a waste of time. It’s not easy, but once you learn to organize your time you can accomplish so much more than you ever thought possible.

So what do you need to make Simple and Delicious Pretzel Rolo Bites?
Rolo chocolate, mini pretzel twists, pecan halves
Preheat your oven to 350 degrees.
Line a baking sheet with parchment paper.
Place mini pretzel twists on the parchment paper.
Add a Rolo to the center of each of the pretzels.
Place the baking sheet in the oven for 3 minutes and not a minute longer or your chocolate will melt too much.
Using a pecan half, carefully press down the Rolo so it covers the pretzel.
Let the Pretzel Rolo Bites cool until the chocolate hardens.
I must say, there’s something about the sweet and salty aspect of these treats that makes them pretty addictive. I don’t know how many of these Pretzel Rolo Bites were eaten by me and “the boys” but I can say that quite a few never made it in my holiday platters. Oh well. Worst case scenario, I can make another batch. I can find ten minutes for these treats anytime!
