Whether you’re “taste testing” your own children’s loot, or eating the leftover candy you bought to hand out to trick-or-treaters, the amount of sweets you’ll consume on Halloween night is probably something you don’t want to say out loud.
I’m definitely not sharing how many Twizzlers and Twix bars I will be eating with anyone…I can promise you that!
If there was ever a day to eat a good breakfast, Halloween is that day.
Because let’s be honest here, Halloween night is one big sugarfest! Starting your family’s day off right with a hearty breakfast is definitely a smart idea.
Don’t you worry, there will be plenty of time to overindulge later in the evening.
With Halloween falling in the middle of the week once again this year, I challenged myself to come up with a Halloween breakfast that was not only delicious but super quick to make on a hectic weekday morning.
I always like to start with meals I know my family already loves. One of our all-time favorite breakfast recipes is something I call eggs in a basket. I’ve already shared it on the blog earlier last year.
Have you heard of it before? Maybe you’ve heard it referred to as “eggs in a hole” instead.
It’s so easy to prepare. To make eggs in a basket, you simply remove the center of a piece of bread and cook an egg right inside of it! It is beyond simple and literally takes 5 minutes to make.
This was an idea I could run with…
To take this easy breakfast recipe a step further, and make it even more delicious, I decided to turn it into a sandwich filled with melted cheese and bacon. How could you possibly go wrong with those additions?!
Because I believe in giving credit where credit is due, I must give kudos to my son, Zach, for giving me the idea for this egg in the basket breakfast sandwich. He recently mentioned that it would be amazing to open a restaurant that served only variations of eggs in a basket.
I thought his idea was fabulous! Unfortunately, opening a restaurant isn’t in the cards for us at the moment so the best I could do was try and recreate his idea at home.
Zach was happy with my efforts and so was his stomach. He willingly acted as my guinea pig and gave me the thumbs up on my eggs in a basket breakfast sandwich.
Now my husband, Patrick, is counting down the days until Halloween comes so he can give it a try. I’m sensing he might be a tidbit jealous he missed out on the taste-testing process.
Spooky Halloween Breakfast Sandwich Idea
Here’s what you need:
2 pieces of bread per person, 2 pieces of cheese per person, 2 eggs per person, meat (I used bacon but you can use ham, sausage, turkey, etc.), seasonings (I used salt, pepper and garlic powder), butter, Halloween-shaped cookie cutters
Grab your bread and Halloween cookie cutters.
Begin by making a hole in the center of your two pieces of bread with your cookie cutter. Place the cookie cutter you are using in the center of your bread. Press down gently and slightly shimmy the cookie cutter back and forth to cut through the bread.
You might have to adjust the cookie cutter to fit on the bread like I had to with the ghost. This is perfectly fine!
I did all the cutting at once so I had my bread ready to go for each of my three sandwiches. Keep the “hole” from the center of the bread too. The extra pieces are perfect for dipping in the egg yolk.
In a skillet, melt your butter over medium heat.
Place two pieces of bread and their accompanying “holes” into the skillet.
Next, carefully crack an egg into each of the two bread holes.
Sprinkle your seasonings onto the bread and eggs. I used salt, pepper and garlic powder. I love the addition of garlic powder because it gives the sandwich a garlic toast taste. Feel free to use whatever seasonings you prefer.
Make sure to keep a close eye on your bread holes. Because of their smaller size, they tend to toast a little faster than the eggs in a basket. You might need to flip them prior to flipping the baskets. I flipped my eggs in a basket over after about three minutes. I like to have runny yolks in my sandwich so when I cut into the egg it pours all over the bread and I can mop it up with the toasted bread holes.
Note: The doneness of your eggs is a personal preference. If you like your eggs more well done, you might want to lower your burner to medium-low as to not burn your toast while waiting for your eggs to cook.
Season the other side of the bread and baskets.
Add a slice of cheese to each piece of bread as well as the meat of your choice. I used bacon but really skies the limit here. I went with the microwave variety of bacon since I was looking to keep the cooking time down on the recipe.
Carefully close the two slices of bread together to make a sandwich and cook a few more seconds on each side just to make sure the bread has toasted well.
Transfer your eggs in a basket to a plate and enjoy your scrumptious Halloween breakfast!
