I’m back this week with another edition of my ever so popular Thirsty Thursday series and I’m super excited about what I have in store for you today. If you’re new around here, I’ve been dedicating every Thursday since March to making a fun and creative cocktail to share. Quite frankly, it has been amazing and I love doing it!

My Thirsty Thursdays started with me simply wanting to share some delicious cocktail recipes I enjoy making at home. As the months have progressed, however, I have developed many of my cocktails through requests and recommendations from friends, family, and my Lake Life State of Mind community. 

Today’s Strawberry Lemonade Vodka Popsicles were inspired by our friends, Cory and Bethany. A couple of weeks ago, they invited us to spend the day on their boat with them. We eagerly said “yes” and enjoyed getting a tour of Saint Augustine…from the water!

As a treat, Beth made some delicious alcohol-infused popsicles for us to snack on during our day at sea. She made two varieties, rosé wine and rum, and placed them in disposable popsicle bags (I linked them below in with other Amazon popsicle molds). They were super yummy and I knew right there and then I had to create some sort of adult popsicle recipe to share here on the blog.

I came home eager to make my own version of boozy popsicles and quickly realized it isn’t as straightforward as one would think. If you weren’t aware, alcohol doesn’t actually freeze on its own. That’s why we always have a bottle of tequila in the freezer ready to go…just saying!

My thoughts immediately turned to: Can you even freeze alcohol into popsicles? Will vodka freeze in a popsicle? 

I knew it was possible, I mean we just indulged in spiked popsicles a few weeks ago. The key was to find the perfect ratio of liquid to alcohol so that the other ingredients would freeze enough to form an actual popsicle.

Instead of creating an entirely new cocktail to turn into a boozy popsicle, I opted to pick one that I already had on the blog because of its overwhelming popularity. This summer, my Strawberry Vodka Lemonade recipe was a huge success and instantly started getting shared all over social media and the Internet. 

After a little bit of playing around with the drink, I was able to come up with the perfect concoction that not only froze perfectly into popsicles but also tasted absolutely delicious. I basically did all the hard work for you so now all you have to do is follow my recipe and you’ll be on your way to the perfect vodka popsicle!

Strawberry Lemonade Vodka Popsicles

Strawberry Lemonade Vodka Popsicles

¼ cup of lemon juice, ½ cup of strawberry lemonade, ¼ cup of strawberry vodka (can substitute regular vodka), sparkling water or soda (can also use Sprite), 4 – 5 strawberries (frozen or fresh)

Ingredients to make Strawberry Lemonade Vodka Popsicles

Add your strawberries, lemon juice, and strawberry lemonade to a cup. I prefer to use a mixing cup because the spout makes it easier to pour the finished mixture into the popsicle molds. Using a muddle, fork, or whatever else you can find, break up the strawberries inside your mixture.

Once you’ve broken up the strawberries, add in your strawberry vodka and stir everything together.

Carefully add your mixture into the popsicle molds leaving a little bit of space at the top.

Next, fill in the little bit of leftover space with seltzer, sparkling water, or even Sprite.

Place your tops on the popsicle molds and place your strawberry lemonade vodka popsicles in the freezer for at least four hours.

Pull the alcohol-infused popsicles out of the freezer when you’re ready to serve.

If you’re having trouble removing them from the popsicle mold, run them under hot water for a few seconds and they should pop out with no problem.

These vodka popsicles taste absolutely delicious without an overly aggressive alcohol taste. You might be inclined to want to add more vodka the next time around but I highly recommend that you don’t. Remember, these boozy popsicles were created keeping the perfect alcohol to liquid ratio in mind. Adding too much alcohol can result in your popsicles not freezing.

One more thing to consider before I go. Because the alcohol in these popsicles never actually freezes (it’s the other liquids and strawberries that solidify), you’ll notice that your popsicles will melt very quickly. I suggest you leave your popsicles in the freezer up until the very last second!

  1. These are darling and they look delicious! Love the popsicle stick molds you used! Okay–I want to make these with my grandkids sans the liquor and after reading through your recipe, I think it will work. Thank you for a great post–love your tutorials and all the Amazon suggestions. Summer is winding down, but it’s still in the high 90’s here–and we are still eating popsicles!

    1. One more week of summer cocktails before I switch to fall. Living in Florida, it’s hard to make the switch when it’s hot and humid here every day! I will definitely be enjoying a few more popsicles myself before the season is over.
