Your Valentine’s Day just got a whole lot sweeter, my friend. Boy, are you one lucky duck to have stumbled upon this recipe for Valentine’s Day Ice Cream Cake. I say this from personal experience because I devoured a hefty piece of ice cream cake this afternoon as my lunch. No judging allowed!

Last year, I created a recipe for Valentine’s Day Cake Mix Cookies as a Valentine’s Day sweet treat. My family loved them to pieces but I wanted to up my game this year and make them something that would literally knock their socks off. I must say, this Valentine’s Day Ice Cream Cake totally delivered!

Have you ever tried a Good Humor Strawberry Shortcake Bars before? These bars are so nostalgic for me. With one single bite, I’m instantly transported to the days where just the sound of the ice cream truck brought me pure joy. I would bolt inside my house to count out whatever pennies I had on hand for a Good Humor ice cream bar. The good old days, I tell you!

Lucky for me, these strawberry shortcake bars were the perfect color scheme for my Valentine’s Day ice cream cake. You have your pink color from the Good Humor bars, white from the Cool Whip, and then red from the fresh strawberries. Simply perfect in every way!

A big plus to this recipe is the fact that it can be made ahead of time and kept in the freezer. In fact, you’ll need an hour or so for the cake to set regardless, so you might as well make it the day (or even a couple of days) before you plan on serving it to your sweethearts. Simply prepare your Good Humor Strawberry Shortcake ice cream cake in a 9 x 13 casserole dish and place it in the freezer until you’re ready to serve. 

There’s no way in the world that the three of us could ever finish this Valentine’s Day treat in one sitting. It’s impossible! Lucky for us, and now you since you’ve come across this amazing recipe, any leftovers can be covered up and placed back in the freezer.

The toppings and fillings you use are completely customizable to your likings but I went simply with some crushed Golden Oreos and fresh strawberries. For the strawberries, I chose to chop some up and then make heart-shapes out of others. The hearts were a little extra but I’m extra…so there’s that!

Additional Topping and Filling Ideas:

  • Oreos (all varieties)
  • White chocolate chips 
  • Conversation hearts
  • Fruit (strawberries, raspberries, cherries)
  • Candy melts (pink, red, purple)
  • Strawberry syrup
  • Nuts (all varieties)
  • Valentine’s Day candy 

One final positive to making an ice cream bar cake is the fact that the size and shape can be made to your liking. I used two packages of Good Humor Strawberry Shortcake Bars for a total of 12 ice cream bars. I divided the 12 bars into two layers of six. This made a long, narrow cake that fit nicely in my 9 x 13 casserole dish. 

You can make a square cake by making three layers of four ice cream bars per layer. You could also get a square by making four layers of three ice cream bars per layer. Just a little bit of basic math is all you need. Maybe get the kiddos to help with that!

2 packs of Good Humor Strawberry Shortcake Bars, 8 oz. Cool Whip (thawed), toppings of your choice (I used crushed Golden Oreos and fresh strawberries)

Ingredients for ice cream cake

Begin by breaking up your Golden Oreos. Mine was already in a bag so I kept them in there.

Break up the cookies until they have turned into crumbles, just like so.

Next prepare your strawberries. I diced some into little pieces.

I also cut a few strawberries into heart shapes too.

Open the ice cream bar on one side to expose the popsicle stick. LEAVE THE ICE CREAM BAR IN THE WRAPPER.

With the Good Humor Strawberry Shortcake Bar still in the wrapper, grab onto the popsicle stick and remove it from the ice cream. This takes a little effort but nothing you can’t handle!

Continue removing all the popsicle sticks making sure to leave all the ice cream bars inside the wrapper until you’re ready to assemble the ice cream cake.

On the bottom of a 9 x 13 casserole dish, lay down six ice cream bars.

Add a layer of Cool Whip on top of the first layer of ice cream bars.

Sprinkle some Golden Oreo crumbles and some chopped strawberries on top of your Cool Whip.

Next, add your additional six ice cream bars on top of your fillings and give it a gentle press down. You’re pressing down gently to even out the ice cream cake. You’re looking for as flat of a surface on top as you can get.

Completely cover the ice cream cake with the Cool Whip.

Because I love ice cream cakes with cookie crumbles around the edges, I did exactly that for this cake. I grabbed a handful of cookie crumbles and gently pushed them onto the side of the cake.

I made sure to do it all the way around the entirety of my ice cream cake.

The heart-shaped strawberries were placed on top of the covered ice cream bars, next.

I filled in the empty space with some more cookie crumbles and chopped strawberries.

All that’s left to do at this point is to place the cake inside the freezer for at least one hour to set before serving!

  1. OMG I am making this for Valentine’s Day. Strawberry Shortcake bars are my favorite ice cream bars and I always get them when the ice cream truck rolls around. It makes me think of summertime at our local pool. So excited about this recipe.
