Truth bomb, friends. As I sat down at my computer this Monday morning to work on my post for today, I literally had no idea what I wanted to write about. Zero, zilch, nada…
Normally, I have a plan in place and ideas mapped out for future post ideas, but today I just wasn’t feeling what I had planned and lacked complete and total motivation. Do you ever have those moments?
Last night was the Super Bowl, big congratulations to the Chiefs, and we didn’t make it home until pretty late. My head finally hit the pillow around midnight, and in what felt like a minute, the alarm went off this morning for my hubby and me to get up and work out.
After snoozing about 5 times, not only did we not get a workout in, but Patrick had to hustle to even make it out of the house on time. It was a morning for sure! I’m currently still in my jammies, a huge perk of working from home, and you better believe my bed is not made. See…total lack of motivation!
Lucky for me, today was one of those days that I miraculously came up with an idea and I actually had everything I needed on hand to pull it together. That’s usually another obstacle you deal with when you’re not prepared ahead of time…you don’t have what you need to execute your plan.
At this point, you already know that my $1,000,000 idea was to put together a batch of Valentine’s Day cake mix cookies. In addition to being lazy this morning, I also woke up starving from all the Super Bowl food I indulged in last night. Cookies seemed like the perfect remedy for all of the above!
Cake mix cookies are super simple to whip together and most people have all the ingredients on hand at any given time. The best part is they’re also easily modified by making simple swaps in the ingredients. This comes in handy when you don’t have exactly everything you need for the recipe but have other similar ingredients. Or you’ve left things to the last minute like someone who shall not be named…Tiffany Alexis Hernandez!
For example, this recipe calls for a box of yellow cake mix. Maybe you don’t have that in your pantry but you have a white or funfetti cake mix instead. No worries! Use it instead.
What if you don’t care for white chocolate chips but absolutely love the semi-sweet variety? You’ve got this! Simply use the same amount of semi-sweet chips in place of the white variety. Easy peasy, right?!
Once you see how easy this recipe is to switch up, I can pretty much promise you’ll be addicted to coming up with flavor combinations for the perfect batch of cookies.
This cookie idea is the perfect recipe for any beginning baker and definitely easy enough for your preteens and teens to make on their own. You don’t even need to pull out a mixer for this. You literally stir everything by hand!

Valentine’s Day White Chocolate Chip Cake Mix Cookies
15.25 oz Yellow Cake Mix, 2 eggs, ½ cup vegetable oil, 1 cup white chocolate chips, ½ cup Valentine’s Day sprinkles (plus more for garnish)
Preheat your oven to 350 degrees.
Place all your cookie ingredients in a bowl.
Stir everything together until it’s completely combined.
Using an ice cream scooper, scoop even-sized cookie balls to a lined cookie sheet. Here’s the link for the cookie mat. I love it!
I like using my large ice cream scoop from Pampered Chef to make the perfect-sized cookies. It’s a 3 tablespoon measurement. I found a similar on Amazon for you, here!
Place your cookies in the oven and bake for 10 – 15 minutes. The cooking time will vary based on the size of your cookies. Mine took the entire 15 minutes because of their larger size.
Once the cookies are done, pull them out of the oven and immediately garnish them with your additional sprinkles.
I like to gently push them in the cookie with my hand.
Let the cookies cool on the baking sheet for five minutes before moving them to a wired rack to continue cooling completely.
All that’s left to do at this point is to sit back and enjoy your cake mix cookies. I told you it was that easy!

These look delicious…and super easy (which is what I’m all about these days!). But, I was really intrigued by your cookie mat…tell me more about it. I have really good cookie sheets, but I’m wondering if you use them because the cookies bake more even or what–would love to know. And thanks for the tip of the ice cream scoop. I’m afraid I haven’t come up with the times on that one–I use my fingers and roll them to a walnut-size ball, but I like the idea of an ice cream scoop. The cookie mat is just in place of using parchment paper so the cookies don’t get stuck to the cookie sheet. I love it because it’s reusable and I feel like I’m helping the environment, lol. Nothing wrong with rolling cookies by hand…I still do this from time to time too!
