Maybe you walked into a room and stopped dead in your tracks because you had no clue what you ventured in there for in the first place.
Or maybe you vividly recall putting something away in a particular place in your house but go to look for it and it’s nowhere to be found.
The older I get, the more common these occurrences are becoming for me. I must say, it’s kind of depressing getting older!
I bring this up because I recently had a situation where I thought I might be going crazy. I had myself convinced I was one step away from losing whatever marbles I have left in this brain of mine.
Wouldn’t you know it all centered around these white chocolate candy corn m&m cookies with macadamia nuts? Really, I’m telling you the truth!
I could remember seeing white chocolate candy corn m&ms at Target last Halloween and saying to myself I needed to make something with them for the blog in the upcoming year. I even came home and wrote it down in my idea book so I wouldn’t forget it when Halloween rolled back around this year.
As soon as the Halloween candy started hitting the shelves in Target I immediately began my quest to find the m&m’s I saw last Halloween.
I didn’t find them at first but figured it most likely was because the autumn season had just started.
The next time I went to Target I looked again. Nothing.
I tried one more time at Target and still nothing.
I looked in Publix and CVS and still found nothing.
By that point, I had convinced myself I was a lunatic who must’ve seen something last year that resembled what I thought was white chocolate candy corn m&m’s. I scratched off the Halloween cookies from my idea list and moved on with my life.
Fast forward to last week when I found myself out and about looking for pieces to add to my Black, White, and Teal Halloween decor. I had pretty much visited every store in my area: Target, HomeGoods, World Market, Target, Michaels, Joanns, Bed, Bath and Beyond, and even the gift shop in Cracker Barrel.
I had one piece left to get and I didn’t want to go home without finding it. On a whim, I decided to stop at Walgreens since it was on my way home.
Once in the store, I headed straight to the Halloween decor but was super bummed to see they had nothing that fit the bill. I started to walk out of Walgreens but decided to press my luck and check the Halloween candy for the white chocolate candy corn m&m’s.
Wouldn’t you know they had them! Not only could I now make my Halloween cookies but I clearly wasn’t CRAZY!
It was a Halloween Miracle.
So take this story as a public service announcement, friends. These white chocolate candy corn m&m’s are out there in the stores you just have to be patient when looking for them.
And if you find them, buy extra so you aren’t desperately hunting for them like I was. Learn from this girl’s mistake!
White Chocolate Candy Corn M&M Cookies with Macadamia Nuts
Here’s what you need:
3 cups flour, 1 teaspoon baking soda, ¾ teaspoon salt, 1 cup (2 sticks) unsalted butter (softened), 1 cup brown sugar, ¾ cup white sugar, 2 large eggs, 1 tablespoon vanilla extract, 1 cup macadamia nuts (chopped), 2 (8 oz.) packages white chocolate candy corn m&m’s
Sift together your flour, baking soda and salt and put the bowl aside.
Place your butter in the standup mixer and cream over medium speed.
Next, add your brown and white sugar and continue mixing on medium speed.
Add one egg at a time.
Pour in your tablespoon of vanilla extract.
On low speed, slowly add your dry ingredients into the mixing bowl and continue mixing until the ingredients are just combined. You don’t want to over mix!
With a spatula, fold in your cup of chopped macadamia nuts.
The next step is to add the white chocolate candy corn m&m’s. I added a full bag and ½ of the second.
The other half of the second bag I put aside to push into the top of the cookies before baking.
Cover two baking sheets with parchment paper or a Silpat.
Using an ice cream scooper, create equal-sized cookies and place them on the prepared cookie sheet.
With the m&m’s you put aside, place a few on the top of each of the cookie dough balls.
Now that the cookies are ready to go, I recommend you place your cookie sheets in the refrigerator for 30 minutes to allow the dough to chill.
The first batch of cookies I tried making I decided to skip this step and the dough spread into one gigantic cookie!
Right before you pull the cookies out of the fridge, preheat your oven to 350 degrees.
Put your cookies in the oven. Large cookies take about 18 minutes and small cookies take 15 minutes. As always, every oven differs so make sure to check on your cookies a little before the suggested time to prevent burning.
Pull your cookies out of the oven and allow to cool just enough so you don’t burn your fingers when digging in!
